Starting in 9th century Japan, where Buddhism was spreading, meat consumption was limited so many turned to fish instead. This influence caused sushi to become more popular and begin evolving. History and inventions also helped evolve modern sushi in many ways like the expansion to other countries through Japanese immigrants who created new types of sushi.




THE RISE IN POPULARITY


Modern sushi has evolved in terms of its popularity. In the past, sushi was primarily enjoyed by Japanese people or wealthy people. However, over the years, it has become popular all over the world. There are now sushi restaurants in almost every major city, and all different people can enjoy sushi. 


One other way that sushi has evolved is in terms of its presentation. Modern sushi chefs often use unique and creative presentations to make their sushi stand out, but in the past, the presentation was more simple. For example, they might use a flower or a fruit as a garnish on the plate. They might also create elaborate sushi rolls that are beautiful to look at.


EVOLUTION IN FLAVOUR

Sushi has also evolved in terms of its flavor. In the beginning, fermented sushi was common and featured vinegared rice and fish for the most part. However, modern sushi chefs have been experimenting with new flavors and ingredients, and as a result, sushi has become different with many types and flavors



RECIPE

INGREDIENTS

  • 6 sheets sushi seaweed aka nori
  • 1 batch SUSHI PAPER
  • 1/2 lb sashimi-grade raw salmon or desired raw fish of choice
  • 4 oz cream cheese sliced into strips
  • 1 avocado sliced
  • soy sauce for serving

INSTRUCTION

  • Place the seaweed on a bamboo mat, then cover the sheet of seaweed with an even layer of prepared sushi rice. Smooth gently with a rice paddle.
  • Layer salmon, cream cheese, and avocado on the rice, and roll it up tightly. Slice with a sharp knife, and enjoy right away with soy sauce.
